Zinc is a critical component of gustin, a salivary protein required for the normal growth and maintenance of taste buds. A lack of this mineral dulls or completely alters taste perception, often making food taste metallic, bland, or foul. This frequently leads to a severe loss of appetite and subsequent weight loss.
